For breakfast today, I experimented with making peanut butter porridge for the first time, inspired by Central African & East Asian influences -- it turned out tasting pretty good!


I used:

  • White Short-Grain Rice

  • Peanut Butter

  • Oligo (a form of liquid sweetener commercially developed commonly used in South Korea, but one can also substitute with other sweeteners according to their dietary preferences, needs and restrictions)

  • Water


At first, I wasn't sure how it would taste, as the sound of peanut butter and rice sounded odd to me, but the taste was pretty good -- it reminded me of traditional Korean rice snacks and granola bars. It's an energy-dense, good carb breakfast that is sure to help someone kickstart their day -- I can see this being enjoyed in cold, high altitudes for hiking, preparation for running long distances, other athletic activities requiring a high amount of physical stamina, or simply enjoyed as a nice, filling comfort meal.
