Good & Gather's Sweet Kale Kit
Organic Girl's Good Clean Greens protein mix (I know the branding of organic is controversial and people get angry about greenwashing, but hear me out, the quality of this brand has always been amazing, no moldy leaves, very clean, and one can inspect the quality of the salad kit leaves when selecting for a salad. At this point in time, I do really recommend this brand. I do more often than not rinse any salad again when removing from packaging - even when it says "triple-washed" because you never know)

Fresh Strawberries
Olive Oil
Chung Jung's Apple-Flavored Vinegar (a Korean brand, note this is not Apple Cider Vinegar)
Organic Carrots
Kitchen Appliances / Gadgets Used:
Vegetable Y Peeler (there are 2 brands I have access to - one of them glides like butter across vegetable skin, the other a bit slower but safer, remembering to always cut away from oneself - I prefer to peel straight into the trash rather than the sink, it saves me a step of clean-up later)
Cutting board (I used Target's Figmint's 14 x 14 End-Grain Acacia Wood - my first End-Grain cutting board! I try to lengthen its longevity by rinsing it and oiling it lightly with a dab of EVOO on a towel after every use. I love it so much. It makes me feel luxurious - the same way I felt when I bought my second Marc Jacobs handbag - it was amazing, it was at one of those outlets and I still have it to this day)

I made 2 different salad combos that made a lot of sense to me (& I hope will make sense to you, too!): A KFC Coleslaw CopyCat + A Berry Fresh Salad.
For the KFC Coleslaw CopyCat,
I was actually craving the taste of KFC Coleslaw, and I was pleasantly surprised to find that the Sweet Kale Chopped Salad Kit's Poppy Seed dressing tasted like an exactly healthier alternative (but VERY similar to KFC Coleslaw's iconic sweet mildly tangy taste)!
Ingredients in the Poppy Seed Dressing (featured on their packaging, if you want to know for allergy information/want to make your own from scratch):
Soybean oil, sugar, apple cider vinegar, salt, orange juice concentrate, poppy seeds, egg yolk, xanthan gum, lemon juice concentrate, dried onion, dried lemon peel
Alterations I made:
Finely minced / chopped the greens into the size of KFC Coleslaw bits
Finely minced / chopped the organic carrots (after shaving off the outer layer with a Y peeler)
Saved the cranberry/pepita packet for the other salad (will discuss later down in the post).
To serve, I then refrigerated the entire mix (after incorporating in the poppy seed dressing) for a few hours, then served with a few pieces of vegetarian Korean-fried Extra Firm Tofu (in lieu of chicken) and a few spicy pickle chips. If one wanted to serve immediately, they could chill the bowl over a bed of ice.
For A Berry Fresh Salad,
I first prepared a strawberry vinaigrette by blending sliced strawberries with the apple vinegar and a bit of olive oil and set aside. I then rinsed the leaves from Organic Girl's protein mix in a fine mesh strainer. To serve, I placed the leaves in a serving bowl, added the vinaigrette, and some of the dried cranberries/pepitas mix (quite seasonal) from the Sweet Kale kit to top off the rest of the mini-salad. It can go great as a side for any lunch, brunch or dinner! It was extremely tasty and fresh. This particular mix has an extremely high content of Vitamin K, which is necessary for blood clotting.
Mini-Science Lesson:
If you'd like to see evidence of DNA, you can use strawberries (yes, I learned about this as a kid, maybe you have, maybe you haven't) and conduct a strawberry experiment using a scientific method!
