Serves: About 1-2 people.

Recipe:


Ingredients:

  • 1-2 crisp Flatbreads (any kind will do, I believe I used lavash since that was all that was available to me at the time, then toasted it in my toaster oven until completely crisp)

  • ~2 Tbsp of Sriracha Mayo (I would mix Kewpie Mayo and real Sriracha for this -- there may be brands out there now that sell Sriracha Mayo as is, to each their own)

  • 1 whole Sliced Avocado

  • Seaweed Salad, as desired

  • 1 sprig of Green Onion, chopped

  • Fish egg (My ideal suggestion would be Tobiko, but one can also substitute Masago/Ikura), as desired



Directions:


  1. Lay your flat crispbread down.

  2. Spoon your sriracha mayo sauce all over the crispbread.

  3. Optional step that elevates the gustatory experience: toast the flatbread for a few minutes for warmth.


  4. Add your toppings as desired -- I liked adding the avocado slices first, then seaweed salad, green onion, and lastly, ikura on top for presentation. One could also add sesame seeds, or other toppings like shichimi/togarashi, to your choosing.




I made this at home in an extremely nice apartment in North Bethesda, Maryland, when I was feeling nostalgic for this delicious flatbread I used to have during college. Back when I attended, the Dining Halls had been ranked on a similar level as The Culinary Institute of America, and I was extremely besotted with this creation they had created there at their Asian-fusion Dining Hall -- Feast at Reiber.


It was so unique and flavorful, a delicious and simple appetizer easy to assemble. The only thing I tweaked from the original recipe was replacing ikura for the tobiko they used -- the grocery store that was nearby didn't have tobiko, but ikura instead in their sushi section. It's interesting, because, ikura is technically "fancier," but I think for this recipe tobiko is preferable due to its texture (little pops rather that a huge pop).
