Hello! And welcome to the 2nd post of Pizza Rat's Paradise.
Serves: About 1 person multiple times, or several people in 1 sitting, it depends. Can be used to pack for lunch, for an at-home meal, or for guests/parties!
Recipe:
These are what I used to make this recipe, but one can tweak it to one's own taste and preferences, trying out different flavors, herbs, spices.
Ingredients:
6 Soft-Boiled Vital Farms' Eggs
My Soft-Boiled Egg technique: Bring water to a roiling boil, then gently add eggs in to avoid cracking the shell, boil for 6 min. Remove eggs with a spoon to avoid burning hands, run under cold water, then gently roll eggs on the countertop to introduce fine cracks. Tap the wide egg bottom gently (or whichever side contains a pocket of air), loosen cracked shell and peel, feeling free to run under running water to help loosen the shell further. I find this technique helps keep the eggs whole without fragmenting.
2-3 Chopped Green Pepper (optional - any kind will do, I used a sweet chili variety)
Chopped Green Onion (plucked freshly from the garden)
Soy Sauce (at least 1/4 cup)
Mirin (about 1/4 cup)
Brown Sugar (about 2 Tbsp)
Water (enough to cover everything)
Directions:
Combine all ingredients in your container - you can see below that I took a page from professional chefs and used those deli containers.
Season to taste as you prefer, the amounts above are not exact, as it was my first batch.
Steep in the fridge -- a couple hours was okay, overnight into the early afternoon was a bit too salty.
Slice in half for great presentation (I love the idea of using a wire someday), or enjoy plunging into the whole egg with a spoon, like I did with my meal.

Ohhh my goodness it was so tasty & the marinated eggs came out exceptionally great! Especially with using Vital Farms as the egg brand. Absolute premium luxury -- I would only use Vital Farms' eggs (or a similar quality egg if I could).
I think the next step is to find out a length of time for steeping the marinade, perfecting the marinade and maybe doing a tea marbled egg as well.
The tea marbled egg is so that we can have an extra fragrant note / depth of flavor.
It was a smashing success overall.
