For breakfast today, I experimented with making peanut butter porridge for the first time, inspired by Central African & East Asian influences -- it turned out tasting pretty good!
I used:
White Short-Grain Rice
Peanut Butter
Oligo (a form of liquid sweetener commercially developed commonly used in South Korea, but one can also substitute with other sweeteners according to their dietary preferences, needs and restrictions)
Water
At first, I wasn't sure how it would taste, as the sound of peanut butter and rice sounded odd to me, but the taste was pretty good -- it reminded me of traditional Korean rice snacks and granola bars. It's an energy-dense, good carb breakfast that is sure to help someone kickstart their day -- I can see this being enjoyed in cold, high altitudes for hiking, preparation for running long distances, other athletic activities requiring a high amount of physical stamina, or simply enjoyed as a nice, filling comfort meal.
