Light Weeknight Dinner: Roasted Carrots served on a bed of greens w/ a side green onion sauce

Last week, I had the utmost pleasure of roasting carrots for the first time -- and they turned out DELICIOUS!


Today, I checked the packaging, and I realized it was partly because of the quality of the produce!


Cal-Organic Farms, 1984; 32 oz 2lb Organic Carrots.


The dish took at most 20 min to assemble, and I loved how I felt after consuming. You know when you eat really clean and healthy, and it tastes high-vibrational, and afterwards you feel high-vibrational? That's how I felt, and I'm super excited to share it with you:


Recipe:


Tools:

  • Vegetable peeler

  • Oven-safe baking dish

  • Chef's knife

  • Cutting board

  • Washing station

  • Yo clean clean hands!!!

  • Dishes

  • A small spoon to mix the sauce


Dish components:

  • Roasted Carrots

  • Allium-y Sauce

  • Freshly chopped high-quality greens


Ingredients:

  • For Roast:

    • 3 Cal-Organic Carrots, peeled, cut into thirds, then each third cut lengthwise into 2-3 thick pieces (this is what shape I desired, but you can cut it anyway you like)

    • 1/2 of a Cara Cara Orange (separated into its segments)

    • A dash of oven-appropriate oil (I used a neutral flavor vegetable oil, but if you need to be more picky about your lipid choice, check out my ever-evolving nutrition/food research project here for some recommendations, which I update on Fridays.)

    • Freshly cracked black peppercorns (one of my favorite spices of all time, but you can use any spice flavor profile you like!)

    • Sprinkle of sea salt (Brands Jacobsen, Diamond Kosher Salt Flakes were recommended by Paul Saladino in this ONE independent analysis by him -- but again, like he says, it was just ONE analysis.)

  • For the side allium-y sauce:

    • 2 dollops of Philadelphia's French Onion-flavour Whipped Cream Cheese

    • Freshly cracked black peppercorn

    • Chopped green onion (I pulled it from the garden)

    • A bit of salt

  • A bed of greens:

    • I used parts of red-leaf lettuce I had on hand, freshly chopped

    • Another great type of lettuce I recommend is the Carmona Red Butterhead Lettuce - which I tried out this past year, and is SO great!


Directions:

  1. Toss raw carrot sticks in oil to coat, arrange spaced evenly in an oven-safe baking dish

  2. Add in Cara Cara orange slices between carrot sticks

  3. Bake at 425 deg F for about 12-18 min (depending on your oven, humidity levels, surface area of pan, time of day, when Age of Aquarius is starting, yadda yadda yadda)

  4. While carrots are baking, prepare the sauce in a small bowl or dish, I mixed with a small serving spoon.

  5. Freshly chop all the salad greens of your choice

  6. Once roasting is complete, plate carrots, oranges, sauce and salad for a beautiful colorful trifecta of orange, speckled white, and green, and then SERVE / bon appétit!!!

  7. (If you'd like more protein, I'd recommend slices of your favorite steak/other cuts of meat. Personally, I love a good NY Strip Steak, due to the cap of fat on its edge, that I learned to baste in rosemary, garlic, butter)
