Sometimes you plan, and sometimes you just make something on the spot out of sheer will. I don't know how this one came about, but was experimenting with the ingredients that I had, and came up with these like, little vegan hor d'oeuvres when I was feeling particularly peckish.
Sliced rounds of sweet potato
Slices of beefsteak tomato, sprinkled on with salt (I personally prefer sea salt / Himalayan salt. One of my favorite brands of sea salt is Celtic Sea Salt (in the blue bag)
Chopped cilantro
I stack the beefsteak tomato between sweet potato slices like a small hamburger, and sprinkle chopped cilantro on top for the effect.
It's very refreshing and gives "Cali-fresh/fusion" vibes. Native Californians don't really call it Cali, though...was first weirded out when I went East and I heard "Cali" and it felt like a cheese grater was sliding across my ears.
It's become one of my new favorite fresh creations lately, and I'm so happy to post about it here, maybe it'll come in handy sometime.
